Harvest:
This wine is produced only if the climate, with a long spring and a warm and sunny summer, permits to the grapes to reach perfect ripeness, in terms of sugar content and phenolic complexity. This wine is produced from selected mature grapes, from vineyards where the yield of grapes per hectare is very small. Picked by hand from the vine in 15 kilos baskets, grapes are transported quickly to the cellar and gently placed in the de-stemmer and crusher machine.
Wine-making:
Fermentation in stainless steel tanks;
Controlled pressure and temperature during fermentation; Racking without pressing the peels; Aging in medium-toasted French-oak barrels for eighteen months and a minimum of three months of bottle aging.
Wine description:
As an excellent expression of a wine made only with Sangiovese grapes, this full-bodied wine is ruby red, velvety, and elegant. It offers an imposing structure with a rich and fruity bouquet of cherries and wild berries, aromas of spices, and violet. I.A.P. long / very long
Serving suggestions:
This wine combines perfectly with elaborate meat, game dishes, or aged cheeses. This wine can be preserved in the bottle for years and should be allowed to breathe before being served.
